Chocolatier Jinsun Kim and partner David Ralph opened Kakawa 7 months ago in Darlinghurst. This amazing little shop is filled with handmade delights. Sea salted caramels, Basil chocolate, Tonka and vanilla, bubble wrap pieces, smile chocolate pops and hot chocolate. The hot chocolate is made to order. You can request what ever your taste buds wish for. Milk chocolate, dark chocolate, white chocolate, with chilli, with any flavour thats on hand. When you get your little cup, its almost disappointing, but the richness and intense flavour would be too much in a bigger cup. The amount is just perfect. The wonderful mixture of flavours in the chocolate makes you aware of these chocolatiers experience stretches beyond the marble bench top. Having met in Flying Fish, these two have worked in Bilsons, Bourke St Cafe and Quay. Inspired by each other they also draw on fresh ingredients and spices. They liken the marring of flavours to that of wine. Mixing nutty flavours, fruits, and creams to each different type of chocolate. Each cocoa from each region has its own unique characteristics. If you would like to become a chocolate connoisseur, Kakawa holds tasting classes for an hour on a saturday, $65 per person with a minimum in the group. You will learn more than you could ever imagined about chocolate, and you walk away with a gift bag filled with goodies.Or just pop and treat yourself!
